Christmas Baking

One thing that we have tried to make a tradition every year, is to make some home-made goodies and go and deliver them to friends and neighbours. Sometimes it will be and ‘knock-and-run’ style drop off, so it’s fun and anonymous, other times it’s nice to drop them off and have a quick visit with friends.

Anyway, one thing I have always made each year is mince pies so this year wasn’t going to be any different. A new thing that I did make was some mini-muffin Christmas pudding that I thought were mega cute when I saw my sister make some last year. The recipe is a BBC recipe, found here but I’ll talk you through what I did.


You will need:

– 200g self raising flour

– 100g caster sugar

– 100ml sunflower oil

– 75ml milk

– 1 egg

– 50g dark chocolate chips

– 1 heaped tbsp mincemeat

– 50g white chocolate chips

– 50g dried cranberries


1. Pre-heat the oven to 190c (375f, gas mark 5) and put 24 mini muffin cases in a muffin tray.

2. Mix the flour, sugar in a bowl and make a well in the centre of the bowl. Whisk together the oil, milk and egg and pout into the bowl, stirring gently. Divide the mixture between two bowls. In one bowl add the dark chocolate and mincemeat and in the other add the white chocolate and cranberries. Stir each gently.

3. Divide the two mixtures among the muffin cases and bake for 20 minutes or until golden brown and risen. Remove and cool on a wire rack once cooked.

I then added some white fondant icing to the top of each and drew on some holly using coloured icing. I think they look really cute and it’s nice to have something a bit different to give to others this year.
