One of my goals for the summer, was to do something interesting with the fruit we have growing in our garden. We planted one single strawberry plant last year and it grew and grew. This year we literally have hundreds growing.
I made some strawberry jam with some of the strawberries last week so thought I would try something different thins week. It’s not quite ‘creative’ but it tasted delicious and I must admit I have had it several times for lunch!
It is really simple to make – all you need is:
– Spinach leaves
– Strawberries, hulled and halved
– Feta cheese, crumbled
– Your favourite salad veg (I just added cucumber)
– Balsamic vinegar, to dress
Put the desired amount of spinach on a plate and sprinkle the strawberries and feta (and other salad veg if using) on top. Drizzle some balsamic vinegar on top and serve – simples!
