From the captivating aroma of BBQ coals burning to the oh-so sweet strawberries and cream, cooking in the summertime is one of the things I just LOVE about life. Just so many tasty and fresh foods when you think about summer.
Unfortunately if, like me, you’re more the budding caravan enthusiast Mum or Dad and the less of the Heston ‘I can cook delicious 5 star meals with only a microwave in space’ Mum or Dad, thinking up both delicious and easy to make recipes for all the family is a little outside of your expertise.
That’s why I’m so excited to introduce this first of its kind ‘Ultimate Caravanner’s Cook Book’. Put together by 20 of the UK’s biggest food bloggers, each of the recipes that made it into publication have been tried and tested by each of families involved. As one of those bloggers to take part (no harm in a little self-flattering) I nominated my absolute fave: The One Pan Mexican Style Chicken and Bacon Salad.
As a favourite of all my family going way back to my childhood, I just love how easy it is to make this delicious and spicy summer salad. You don’t need to think about cooking any raw meat, you just throw the salad altogether and away you go. Plus, if you’re a little worried about spice for the kids, just take out the paprika? Simples!
Another of my favourites from the cook book was: The Speedy Aubergine and Halloumi Wraps by Cathy at AdventureMummy.com. Sounding both super simple and super fast I can imagine that these little flatbread masterpieces will taste delicious after five minutes under the caravan grill!
